Ultra Thick Oreo Brownies
Ingredients:
1 cup unsalted butter- melted and very hot
2 Tbsp vegetable oil
2 cups granulated sugar
4 large eggs - room temperature
4 tsp pure vanilla extract
1 cup unsweetened cocoa powder
1 tsp salt
20- 25 roughly chopped Oreos
Instructions:
Preheat oven to 350 degrees F
Lightly grease an 8-inch square pan (these brownies are VERY thick. If you want thinner brownies use a 9x13 baking dish)
Warm butter in a saucepan until bubbling and hot
Combine HOT melted butter, sugar, and oil in a large mixing bowl
Mix well for approximately 1 minute. Add eggs and vanilla, beat for an additional minute
Gently fold the dry ingredients into the wet until JUST combined. Fold in half the chopped Oreos. Do not overmix!
Pour batter into prepared pan, smoothing out the top. Top with the remaining Oreos.
Bake for 40-45 minutes (20-25 minutes if using a 9x13 dish) or until the center of the brownies no longer jiggle. If testing with a toothpick, the toothpick should come out dirty, but not WET.
Remove from oven and allow to cool to room temperature before slicing.
